For a fresh, easy and absolutely delicious meal, try these chicken soft tacos with sliced avocados.  Fresh avocados are quickly becoming one of my favorite foods in the whole world. They are also one of nature’s best miracle foods. While this meal does take some time to cook (nothing done in a crock pot is fast) it is relatively simple and easy to make. Add a single serving of tortilla chips, some guacamole sans sour cream and my usual unsweet tea, and this is heaven.

Chicken Soft Tacos

Ingredients:
1 pound chicken breast
1 can Rotel
1 tsp cumin
1 T cilantro
1/2 tsp cayenne pepper
1/4 C. water
flour tortillas
black beans
avocado
lettuce
cheese

Add chicken breasts and water to crock pot. Pour Rotel, cumin, cilantro, and cayenne pepper over chicken. Cook on high for about 5 hours or until chicken is well done and falls apart easily. Shred chicken with a fork (leave in the crock pot). Cook for an additional 30 minutes to allow chicken to further absorb the sauce. Serve chicken in tortillas with black beans, avocado, lettuce and cheese.

  • Sounds delicious! Only concern I have is that avocados are high in fat. It that just a myth I was told as a kid or is that true?
  • they do have some fat. Not the bad kind but the really good kind. I think you just inspired me to do a whole post on that magical fruit.
